Kerabu Mango with Prawns or Squid

1 mango
10 prawns
Juice of 3 limes
40g bean sprouts
3 spring onions
1 red chilli
3 lime leaves
2 stalks lemon grass
1” piece ginger, julienned
1 tbsp sweet chilli sauce
3 tbsp Coconut Rice Vinegar
3 tbsp lime juice
2 tbsp fish sauce
2 tbsp sugar

METHOD:

- Peel mango, cut into juliennes
- Boil prawns or squid & cut into portions, poached with lemon grass, lime leaves & ginger
- Boil bean sprouts for a few seconds
- Cut all the other ingredients into small portions
- Mix all the items together in a big bowl and squeeze with lime juice.
